Carve a Large pepper and fill with 1 cup of this mixture

Recipe Ingredients for Pepper Stuffing

300 g extra lean ground turkey
130 g sweet red pepper
100 g mushrooms
50 g red onion
1 cup sweet yellow corn, cooked
1 cup black beans, drained and rinsed
250 g brown rice, cooked
1 cup tomato sauce

Recipe Directions for Pepper Stuffing

  1. Brown the turkey,

  2. Dice and sautee mushrooms, peppers, and onion.

  3. Add all ingredients together into one large bowl and mix.

  4. Makes 6 one cup servings.

  5. Can put into wrap or use as pepper stuffing

  6. add parmesan if desired
