This is a quick, easy, and budget-friendly meal. It's great for leftovers, too. Wishbone makes a Russian dressing, and I've also seen some store brand or generics, but I've yet to find a "lite" or low calorie version of it.

Recipe Ingredients for Pepper Steak

3/4 pound sirloin steak, cubed
2 tablespoons olive oil
2 onions, sliced
3 green bell peppers, sliced
3 cloves of minced garlic
16 tablespoons dressing, russian (1 bottle)
2 cups cooked white rice

Recipe Directions for Pepper Steak

Dredge the meat in a slight amount of flour. Heat olive oil in a large frying pan and add meat. Brown until almost cooked through. Remove meat from pan and set aside. On medium heat, sautee onions, bell peppers, and garlic for 5 minutes. Add bottle of dressing and cooked meat and let simmer for 10 minutes, or until the peppers and onions are cooked to your liking. Add salt and pepper to taste (the dressing is fairly high in sodium, so you should be ok with just pepper). Serve over cooked rice.
