Tender steak with crunchy vegetables

Recipe Ingredients for Pepper Steak

1 1/2 pounds round steak
4 large green peppers
4 large tomatoes
16 ounces mushrooms
1 cup red wine
2 tablespoons canola oil
4 garlic cloves
2 tablespoons oregano

Recipe Directions for Pepper Steak

  1. Trim fat from steak; cut into 2 inch x 1/2 inch strips. Brown meat in a dutch oven or simliarly heavy-bottomed pan; add 2 cloves of minced garlic and 1 tablespoon orgegano; add salt to taste. Add wine and one cut-up tomato; simmer for 2-3 hours adding water if necessary.

  2. 30 minutes before serving, sautee muchrooms and peppers in oil until heated but still crunchy; add 2 cloves of minced garlic and 1 tablespoon oregano; sautee for 1-2 minutes to cook garlic. Add salt to taste.

  3. Add vegetalbe mixture and remaining cut-up tomatoes to meat mixture; stir to combine and tomatoes are heated through. Serve over cooked brown rice.
