To be used on top of your favorite cornbread. Adapted from the Moosewood Cookbook.

Recipe Ingredients for Pepper and Onion Shortcake

1 onion, thinly sliced
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
3/4 cup fat free sour cream
3/4 cup nonfat plain yogurt
1/4 cup butter
1/2 tsp salt
1/4 tsp dill weed

Recipe Directions for Pepper and Onion Shortcake

  1. Melt butter in a heavy skillet or saucepan. Add the onions and salt. Turn the heat to low and cook very slowly until the onions are translucent. Add peppers, black pepper, and dill. Cover and cook for 10 minutes.

  2. Add sour cream and yogurt. Keep warm over low heat until cornbread is ready. Ladle the topping over chunks of cornbread. (you may want to serve this in bowls)
