Recipe Ingredients for Pepper-lime Chicken

3 pounds chicken, white and dark, skinless, raw
1/4 cup lime juice
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon dried thyme, crushed
1 teaspoon black pepper
1/4 teaspoon salt

Recipe Directions for Pepper-lime Chicken

  1. Place chicken pieces, bone side up, on the unheated rack of a broiler pan. Broil 4 to 5 inches from the heat about 20 minutes or until light brown.

  2. Meanwhile, for glaze, in a small bowl stir together 1 teaspoon finely shredded LIME PEEL, lime juice, oil, garlic, thyme, pepper, and salt. Brush chicken with glaze. broil for 5 to 15 minutes more or until chicken is no longer pink, brushing often with glaze during the last 5 minutes of cooking time.
