Recipe Ingredients for Pepper Frittata

6 large eggs
1 cup red peppers, chopped
1 cup green bell peppers, chopped
1/2 cup onion, chipped
2 cloves garlic, minced
1 tablespoon extra virgin olive oil
1/2 cup reduced fat shredded cheese, italian blend

Recipe Directions for Pepper Frittata

  1. In an oven proof skillet, saute the peppers, onion and garlic in the olive oil.

  2. Beat the eggs and pour over the sauteed vegetables

  3. Lift the sides to let egg run underneath, but don't stir

  4. When the eggs are partially set on the bottom, top with cheese and place in a 350f oven for about 20 minutes, until the eggs are cooked and the cheese is beginning to brown.

  5. Slide out of the pan onto a platter and cut into wedges to serve.
