Recipe Ingredients for Pepper and Basil Frittata

2.5 cup Cauliflower
1 medium Squash, Summer, Zucchini, Includes Skin
2 cup ReddiEgg Real Egg Product
2 oz Mozzarella, Part Skim Milk Cheese
1 serving Olive Oil
6 tsp Garlic
0.5 cup leaves, whole Basil, Fresh
0.5 tsp Sea Salt
1 tbsp Pepper, Black
1/2 cup, halves Peppers, Sweet, Red

Recipe Directions for Pepper and Basil Frittata

  1. Prep: Chop veggies put to the side. Mix egg substitute, basil, pepper, salt & cheese in bowl. Pre-heat oven 400.

  2. Heat frying pan to med-hi add oil & garlic. Add chopped veggies, saute till they are browned. Add egg mix, cook halfway then transfer to 8x8 baking dish.

  3. Bake for 10 min. Check after 5 min, no longer than 10 min. some mosture will be there from the veggies but the eggs should be completely set.
