Penne (Whole Brian) with Kale and White Beans

Recipe Ingredients for Penne (Whole Grian) with Kale and White Beans

1 lb portabello mushrooms, chopped or sliced.
4 teaspoons extra-virgin olive oil
2 medium yellow onions, chopped fine
12 Garlic Cloves (minced)
1 teaspoon minced fresh thyme
1/8 teaspoon red pepper flakes
32 oz white beans (canned)
2 cups low sodium chicken broth
1 pound kale stems and leaves cut into 1 inch pieces (= one bag pre cut/washed) Salt and pepper to taste
12 ounces whole wheat penne (or rotini or Gimelli)
1 julienne red bell pepper, for color (optional)

Recipe Directions for Penne (Whole Grian) with Kale and White Beans

  1. Cook onion in oil until softened, about five minutes.

  2. Stir in garlic, thyme, and red pepper flakes and cook until fragrant, about 30 seconds. Stir in beans and broth. Bring to simmer and cook until thickened slightly, about 10 minutes.

  3. Stir in kale, cover and cook, stirring occasionally until tender, about 10 to 12 minutes. Off heat, mash some beans against side of pot with wooden spoon to thicken sauce. Season with salt and pepper to taste. Add some red bell pepper if desired.

  4. Meanwhile bring 4 quarts water to boil in large pot. Add pasta and 1 teaspoon salt and cook stirring often, until al dente. Add remaining 2 teaspoons oil, cooked pasta, and 1/4c Parmesan cheese to bean mixture and toss to combine (optional).

  5. Before serving, add more chicken broth as needed to adjust consistency.

  6. Sprinkle top with remaining quarter cup of Parmesan cheese (optional), or serve in side dish for individuals to add as needed.
