Recipe Ingredients for Penne with Vodka Sauce

8 oz. penne
1 tablespoon butter
2 oz. pancetta, diced small
2 cloves garlic, crushed
3 tablespoons vodka
1 cup tomato sauce
1/4 cup evaporated skim milk
1/4 cup grated parmesan

Recipe Directions for Penne with Vodka Sauce

  1. Put salted water on to boil for pasta. Cook pasta as directed.

  2. Melt butter in large, heavy skillet. Add garlic and pancetta and saute until pancetta is lightly browned.

  3. Add vodka and simmer until reduced by half.

  4. Add tomato sauce, cream and herbs and simmer 7-8 minutes, until everything is blended and smells yummy.

  5. If it tastes too acidy, add a dash of sugar to smooth it out. Then stir pasta into sauce and top with parmesan cheese.
