No vodka needed - if your family likes the "dry" taste, you can add some dry white wine. Non-fat half and half gives it the creamy taste without the fat.

Recipe Ingredients for Penne with "vodka" sauce, local chicken and vegetables

1 1/4 lb local chicken breasts or tenders
1/4 c olive oil
160 g local sweet onions (1 medium)
8 oz baby bella mushrooms (can sometimes get locally)
29 oz tomatoes with basil and garlic (2 cans)
9 oz tomato paste (1 medium can)
6 oz fat-free half and half
13 7/20 oz Barillia Plus penne (1 box)
6 g fresh local basil (about 1 small bunch)
1 oz grated romano cheese (about 1/4 c)

Recipe Directions for Penne with "vodka" sauce, local chicken and vegetables

  1. Brown the chicken in a cast iron skillet with a bit of olive oil (it will still be pink inside - the chicken will finish cooking in the sauce). Remove to a cutting board.

  2. Cut onions in large chunks and saute in cast iron skillet with additional olive oil as needed until golden and slightly tender. Remove to a bowl.

  3. Wash and cut mushrooms into large chunks and saute in cast iron skillet with additional olive oil as needed until tender. Add onions and remove from heat.

  4. Process tomatoes and paste in blender until smooth - pour into large cast iron pot and simmer (you can rinse the blender with a bit of water and add that as well).

  5. Cut up chicken into bite-sized pieces and add to tomato sauce. Simmer for about 10 minutes.

  6. Add mushrooms and onions and white wine/vodka if desired. Simmer another 5 minutes.

  7. Remove from heat and stir in half and half.

  8. Cook pasta in boiling water, drain and add to sauce - reheat if necessary.

  9. Serve in pasta dishes with basil ribbons as garnish. Pass grated romano cheese.
