Recipe Ingredients for penne with vegetables

1 eggplant, cubed
2 zucchini, cubed
2 squash, cubed
1/2 green pepper, cubed
1/2 onion, cubed
1 cooking spray
3/4 lb penne
1/4 c parmesan cheese
1/2 c basil, chopped
2 tbsp olive oil

Recipe Directions for penne with vegetables

  1. coat pan with cooking spray

  2. layer vegetables in a single layer and spray with cooking spray

  3. bake at 500 degrees for 20 minutes

  4. cook penne

  5. mix penne, vegetables, basil, parmesan and oil
