Recipe Ingredients for penne with tomato-vegetable sauce

14 1/2 oz whole wheat penne pasta
32 oz chopped tomatoes
1 large onion, chopped
5 cloves garlic, minced
2 zucchini, chopped
4 carrots, chopped
2 tbs extra virgin olive oil
10 cherry tomatoes, halved
15 kalamata olives, chopped
2 tbs tomato paste

Recipe Directions for penne with tomato-vegetable sauce

  1. saute onions and garlic 5 min in olive oil

  2. add carrots and zucchini, as well as fresh/dried herbs (rosemary, tarragon, and basil) and saute 5 min more

  3. in a separate pot boil water and cook penne, drain.

  4. add canned tomatoes, olives cherry tomatoes, and tomato paste and simmer about 20 min.

  5. add penne to sauce and simmer 10 min more.
