Penne pasta with spinach and vegetables, tossed in olive oil and garlic.

Recipe Ingredients for Penne Spinach Medley

1/2 lb penne pasta
4 tbsp olive oil
4 slices deli ham
1 cup cherry tomatoes
1 cup peas
4 cups spinach

Recipe Directions for Penne Spinach Medley

  1. Boil pasted in water

  2. In a separate, large pot, heat oil and chopped fresh garlic until you can just smell the garlic

  3. Toss in fresh spinach and peas, steam until spinach is soft

  4. Drain pasta and return to pot

  5. Add spinach and garlic mixture to pasta

  6. Chop deli ham into small squares, add to pasta mixture

  7. Stir, add grape tomatoes and voila!
