Penne with roasted tomatoes, zucchini & cheese

Recipe Ingredients for Penne with roasted tomatoes, zucchini & cheese

8 oz Penne
2 large whole (3" dia) Tomatoes, Red, Ripe
1 medium Squash, Summer, Zucchini, Includes Skin
1 small Onions
1 tbsp Olive Oil
1 clove Garlic
1 tsp Magic Seasoning Blends
10 leaves Basil, Fresh
0.25 serving Canyon Ranch homemade chicken stock 1cup

Recipe Directions for Penne with roasted tomatoes, zucchini & cheese

  1. Roast tomatoes in 450F oven for 20 minutes. Stir. Roast another 20 minutes or until most liquid has evaporated.

  2. Season squash and onion with Magic Seasoning. Saute in olive oil until tender. Add garlic and cook another 5 minutes.

  3. Cook pasta as directed. Add to vegetable mixture. Add broth and basil leaves. Add tomatoes. Heat long enough for pasta to absorb some flavor. Add more broth if needed. Add cheese.
