Recipe Ingredients for Penne with Roasted Tomatoes and Feta

2 teaspoons extra virgin olive oil
3/4 cup cherry tomatoes
1 teaspoon basil
1 teaspoon parsley
1 tablespoon finely chopped roasted red pepper (optional)
2 oz. (2/3 cup) Penne
1/4 cup feta

Recipe Directions for Penne with Roasted Tomatoes and Feta

  1. Boil water in a pot and cook penne.

  2. While the penne is cooking, place oil and tomatoes in skillet on med-low heat. Sprinkle with salt and pepper, cover for 10 min.

  3. Uncover tomatoes and stir. Add basil and parsley and increase heat to med-high. Continue stirring until tomatoes have wilted.

  4. Drain pasta and add to tomatoes in the pan. Stir the pasta and tomatoes until the pasta is coated with basil and parsley.

  5. Optional - You can burst the tomatoes by pressing down on them firmly with a fork (or any other utensil). This will produce a light sauce.

  6. Remove the pan from the stove and top with the feta cheese and red pepper. Allow to sit for one minute to allow the feta to melt slightly. Serve immediately.
