Recipe Ingredients for penne with ricotta and pine nuts

14 oz whole wheat penne
1/4 cup pine nuts
1/3 cup butter
1/2 cup parmesan cheese
5 oz part-skim ricotta
2 tbsp chives

Recipe Directions for penne with ricotta and pine nuts

  1. Cook pasta.

  2. Toast pine nuts. Add butter and let it melt.

  3. Drain pasta and add to frying pan. Toss for 1-2 min. Add parmesan cheese and season with pepper. Toss well. Arrange ricotta on top. Sprinkle with chives.
