Recipe Ingredients for Penne Pesto with Vegetables

0.5 cup Garlic
500 grams Pasta Penne Rigate
2 cup leaves, whole Basil, Fresh
4 serving Extra Virgin Olive Oil
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red

Recipe Directions for Penne Pesto with Vegetables

  1. Stem leaves of fresh basil, chop garlic finely and add to food processor.

  2. Add olive oil teaspoon at a time to create a thick sauce of pesto (less or more than specified may be required).

  3. Cook package of penne pasta until just before el dente, drain, add to large skillet and stir in pesto.

  4. On medium heat, in the same skillet, add hot chili peppers (optional).

  5. Add in broccoli, cook until desired consistency.

  6. Add peas and red peppers and cook until hot, but still tender, not mushy.

  7. Season to taste.

  8. Add garden salad as a side.
