Recipe Ingredients for Penne Macaroni with Peppers

13 1/4 oz penne
1/3 cup extra virgin olive oil
1 cup sweet onions, diced
4 cloves garlic, minced
1 oz fresh basil, chopped
1 cup roasted red peppers, diced
1/2 cup vegetable broth

Recipe Directions for Penne Macaroni with Peppers

  1. Boil 4 quarts water. Add pasta and wait for reboil. Cook uncovered, stirring occasionally, 10 to 12 minutes. Remove from heat and drain.

  2. Heat olive oil in a large skillet on medium heat; add onions and garlic; cook until onions are transparent.

  3. Add basil and red peppers.

  4. Cook 2 more minutes.

  5. Add vegetable broth and hot penne to skillet and toss together until ingredients are evenly distributed.

  6. Season with salt and pepper as needed. Serve immediately.
