Recipe Ingredients for Penne w/Light Tomato & Garlic Sauce (Tofu)

136 g (8) cherry tomatoes, sliced in half
1/3 tbsp extra virgin olive oil
1 1/2 g (3 leaves)basil
1 tsp red pepper
5 garlic cloves, crushed or sliced thinly
1/2 cup tomato sauce
1 cup spinach
2 oz whole wheat penne
91 g (1/5 block) tofu

Recipe Directions for Penne w/Light Tomato & Garlic Sauce (Tofu)

  1. Boil water.

  2. Cook penne for approximately 11 mins or until al dente.

  3. In the mean time while whole pasta is cooking, put olive oil in pan.

  4. Throw in the garlic for 2 mins.

  5. Add tomato sauce and 1/3 - 1/2 cup of water. You can add more water later on if sauce is too thick.

  6. Add spinach, basil, and red pepper.

  7. Simmer sauce while waiting for penne to cook.

  8. Cut up tofu in small blocks, can saute tofu before or leave it uncooked.

  9. Once penne is done, mix sauce with penne and add toss with tofu.
