Recipe Ingredients for Penne with Lemon, Potatoes, and Cannellini

16 oz whole wheat pasta
1 lb potatoes (smaller is better)
1 tbsp olive oil
2 tbsp dried basil
5 cloves garlic, minced
1 cup chicken stock
2 oz. lemon juice (1 lemon)
4 cups fresh spinach
15 oz cannellini beans
1 salt and pepper to taste
1 tbsp fresh basil (optional)

Recipe Directions for Penne with Lemon, Potatoes, and Cannellini

  1. Bring large pot of water to a boil.

  2. Halve or quarter potatoes and slice 1/4? wide.

  3. When water boils add potatoes and then pasta. Cover and boil until pasta is al dente and potatoes are cooked through. In the meantime...

  4. Wash (and chop into medium pieces if using spinach or large leaf) greens and set aside.

  5. In large skillet, warm basil and oil over medium heat. Add garlic and sautee for a minute or two?just until it starts to brown.

  6. Add vegetable broth and lemon juice, scraping bottom of pan to get all the good stuff mixed in.

  7. Add greens and stir until just wilted. Add beans with just a bit of water. Stir and simmer for 2 to 3 minutes. Salt and pepper to taste. (Somewhere in here you will have remembered to check the pasta/potatoes and miraculously not let them overcook.

  8. 9) In the large pasta pot, add the sauce to the pasta/potatoes and mix it all together.

  9. 10) Garnish with fresh basil and chives if you have them lying around.
