Increased the size of the recipe but kept the sausage the same and added mushrooms. Pile on the spinach until you filled the pan

Recipe Ingredients for penne with italian sausage and spinach II

6 ounces penne dry (1 cup)
4 links turkey sausage about a pound
1 onion
2 teaspoon garlic
42 ounces canned Tomatoes
1 tablespoon pesto
3 cups spinach
4 ounces low fat feta cheese
8 ounces mushrooms
1 ounce parmesan cheese
1/8 tsp pepper
1/4 tsp cayenne pepper
1 tsp basil
1 tsp oregano

Recipe Directions for penne with italian sausage and spinach II

  1. Preheat the oven to 350 degrees. Cook the pasta according to the package directions. Drain, and pour into a 3-quart backing dish.

  2. In a large skillet over medium heat, cook the sausage, onion and garlic for 10 minutes, or until brown. Reduce the heat to medium-low Add the tomatoes (with juice) and cook for 20 minutes. Remove from the heat. Add the pesto, Transfer to the baking dish. Stir in the spinach and cheese. Bake for 20 to 25 minutes or until the cheese starts to bubble.

  3. (note...low fat feta does not bubble)
