Recipe Ingredients for Penne and Chicken Tenderloins with Spiced Tomato Sauce

1 tsp Fennel Seed
1 tsp, ground Basil, Dried
1/2 tsp Salt, Table
1/2 tsp Coriander Seed
1/4 tsp Pepper, Black
16 oz Breast Tenderloins
1 tbsp Olive Oil
4 clove Garlic
4 cup Diced Tomatoes, No Salt Added
8 fl oz Wine, Table, White
8 oz Ronzoni Healthy Harvest Whole Wheat Penne Rigate Pasta
1/4 cup Parmesan, Grated Cheese
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for Penne and Chicken Tenderloins with Spiced Tomato Sauce

  1. Combine first 5 ingredients in a small bowl; rub over chicken.

  2. Heat oil in a large nonstick skillet over medium high heat. Add chicken to pan; cook 4 minutes, turning once. Remove chicken from pan; set aside.

  3. Reduce heat to medium. Add garlic to pan; saute 30 seconds or until soft. Add tomatoes and wine to pan, scraping pan to loosen browned bits. Bring to a boil; reduce heat, and simmer 15 minutes. Add chicken back to pan; simmer 5 minutes.

  4. Cook pasta according to package directions, omitting salt and fat. Drain. Toss pasta with chicken mixture in a large bowl. Sprinkle with cheese and basil.
