Penne with tomato-blue cheese-basil sauce

Recipe Ingredients for Penne with Blue Cheese, tomatoes & herbs

1 pound penne
1 large onion
6 cloves garlic
1/2 cup dry red wine
8 oz feta cheese
1/2 cup fresh basil
1 tsp oregano
1 tbsp extra virgin olive oil
18 oz diced tomatoes

Recipe Directions for Penne with Blue Cheese, tomatoes & herbs

  1. saute chopped onion in olive oil until translucent, about five minutes

  2. add garlic and saute for 1 minute

  3. add tomatoes, wine and oregano, let simmer for 8-10 minutes until most of the liquid has cooked down

  4. add salt and pepper to taste and let sauce simmer on very low heat for an additional 8 minutes while penne is boiling

  5. add half of the basil and all blue cheese to sauce and stir until sauce is creamy

  6. combine sauce with pasta and the rest of the basil, garnish with whole basil leaves and serve
