Recipe Ingredients for Penne with Beets and Goat Cheese

300 g. beets (5 or 6 small fresh ones)
1 T. olive oil
1 t. garlic, minced
2 T. balsamic vinegar
1 T. basil, fresh, chopped
1 T rosemary,fresh
55 g. penne pasta, whole wheat, dry
2 c. greens (use tops of beets)
3 oz. goat cheese
1/4 c. parmesan cheese

Recipe Directions for Penne with Beets and Goat Cheese

  1. Clean and boil beets for about 20 minutes.

  2. Wash and chop coarsley the beet greens.

  3. Start water boiling for pasta, boil about 8 minutes.

  4. Add beet greens for last minute or two of pasta boiling.

  5. In small skillet, heat oil and saute garlic and spices. Add vinegar and cook for a minute or two.

  6. Cut goat cheese into small chunks and put in large pasta serving dish.

  7. Use 1/2 c. of water from pasta and greens. Add to cheese and stir to make a thick sauce.

  8. Drain pasta.

  9. Peel and slice beets.

  10. Combine beets, pasta, and spice mixture in pasta dish.

  11. Top w/parmesan.
