Easy pasta for any busy afternoon. Serve with fresh salad and you got yourself a meal.

Recipe Ingredients for Penne w/ Bacon, Tomatoes and Mushrooms

8 oz whole wheat penne
4 servings turkey bacon
8 oz mushrooms
2 cups diced tomatoes
4 sprigs parsley
1 tbsp olive oil

Recipe Directions for Penne w/ Bacon, Tomatoes and Mushrooms

  1. Cook pasta according to directions on package

  2. Drain pasta

  3. Blend half of the tomatoes (1 cup) in a blender

  4. Cut bacon into bite sized pieces and cook in skillet

  5. Wash and slice mushrooms

  6. Add mushrooms to skillet and drizzle with olive oil. Mix and wait for them to brown.

  7. Add rest of the tomatoes to skillet

  8. Add pasta to skillet

  9. Add previously blended tomatoes to skillet and mix all ingredients together

  10. Chop and add parsley
