Recipe Ingredients for Penne with bacon, tomato & spinach

2 1tsp Olive Oil
250 grams Bacon
1 small Onions
2 clove Garlic
400 grams Diced Tomatoes
375 grams Penne
100 grams Baby Spinach
200 grams Feta Cheese
1 oz Parsley

Recipe Directions for Penne with bacon, tomato & spinach

  1. 1. Heat oil in a large frying pan over moderate heat. Add bacon; cook and stir for 4-5 minutes or until crisp. Add onion and garlic; cook and stir for one minute or until softened. Stir in tomato. Bring to the boil. Reduce heat then simmer, uncovered, for five minutes or until thickened slightly.

  2. 2. Meanwhile, cook pasta in a large saucepan of boiling salted water for 10-12 minutes or until pasta is tender. Drain, reserving 1/4 of a cup for cooking liquid.

  3. 3. Add pasta, reserved cooking liquid and spinach to frying pan. Cook for 2-3 minutes or until heated. Remove from heat. Season. Stir in feta. Serve sprinkled with parsley.
