Recipe Ingredients for penne with asparagus and pine nuts

1 lb asparagus
1/4 cup pine nuts
3 tbsp olive oil
1 clove garlic
1 lb tomatoes
1 large egg
1/2 cup parmesan cheese
14 oz whole wheat penne

Recipe Directions for penne with asparagus and pine nuts

  1. Cook asparagus in boiling water - 5-8 min.

  2. Toast pine nuts. Add oil, garlic and tomatoes. Season. Simmer over low heat until tomatoes begin to break down - 15 min.

  3. Beat egg with 1T parmesan. Season.

  4. Cook pasta. Drain well. Add egg mixture and simmer over low heat until egg cooks - 2 min. Add tomato mixture and asparagus. Sprinkle with remaining parmesan.
