Recipe Ingredients for Penne Al forno

5 ounces soya mince
5 grams marigold boullion swiss vegetable powder
300 ml water, boiling
1 small onion, chopped finely
1 garlic clove, finely chopped
1 salt and pepper, season to taste
1/2 tablespoon dried oregano
1 tablespoon corn starch
2 tablespoon water, to mix with starch to bind meatballs
1 tablespoon olive oil
400 grams canned tomatoes, chopped with their juice
1 tablespoon tomato puree
1 teaspoon dried basil
1 medium onion, finely chopped
2 garlic cloves, finely chopped
1 salt and pepper, season to taste
125 grams mozzerella, diced
125 grams ricotta
2 large eggs, hard boiled, diced
3 oz wholewheat bread crumbs
1/2 oz grated parmesan
12 oz penne pasta , cook in a pan of salted water until cooked to how you like it

Recipe Directions for Penne Al forno

  1. Fry the onions until soft, add the tomatoes, tomato puree, garlic basil and salt and pepper and cook until slightly thickened and then blitz with hand blender.

  2. set aside.

  3. Cook pasta how you like it and set aside.

  4. Make the meatballs by rehydrating the soya protein with the water and stock powder wait 15 minutes until it has been fully absorbed by the mince, and thoroughly mix in the onion, garlic oregano and seasoning, now in a small bowl mix the water with corn starch into a paste and add it to the mice and stir in well and make small meatballs with slightly damp hands place on a baking sheet and place in a preheated oven gas mark 7 for 10-15 minutes or until cooked and golden, set aside.

  5. In a lightly greased ovenproof dish put a layer of penne then a layer of tomato sauce then half of the mozzerella, ricota and then half of the hard boiled eggs and meatballs then another layer of penne, tomato sauce, mozzerella, ricotta and eggs and then meatballs.

  6. Top with breadcrumbs and parmesan cheese.

  7. Bake in a pre heated oven gas mark 6 for 15-20 minutes or until bubbly and golden and melted.
