I so wanted shrimp scampi, not quite the same but much better for you!

Recipe Ingredients for Penelope's creamy shrimp and vegi's over noodles

16 oz noodles, whole wheat
15 oz cooked shrimp
1/2 cup onion
2 cloves garlic
1 cup sliced mushrooms
1 tbls olive oil
2 tbls butter
1 tbl basil, dried
1/4 tsp thyme, powdered
1/4 tsp oregano, powdered
1/2 cup fat free half and half
4 cup brocolli

Recipe Directions for Penelope's creamy shrimp and vegi's over noodles

  1. cook and drain pasta as directed

  2. saute onion, garlic and mushrooms in olive oil and butter till onions are transparent

  3. add steamed or heated brocolli, herbs, shrimp and cream and heat thru

  4. serve over noodles

  5. salt and pepper to taste
