Recipe Ingredients for Penelope's chicken and brocolli over noodles

14 oz whole wheat pasta
1 cup skim milk
2 tbls butter
2 tbls flour
18 oz chicken breast
1/2 cup onion
6 mushrooms
3 cloves garlic
1 cup grated mozzarella cheese
4 cups brocolli

Recipe Directions for Penelope's chicken and brocolli over noodles

  1. prepare pasta as directed, drain (save 1/2 cup pasta water)

  2. season chicken with salt and pepper, cut into cubes, saute in heavy pan sprayed with pam until well browned, set aside (keep warm)

  3. make white sauce: heat milk in microwave till hot, do not scald, cook butter and flour over med low heat in heavy bottom sauce pan 3-5 minutes until light brown, then add milk slowly, whisking constantly, turn heat up to med-med high, bring to boil stirring constantly, until thick (gravy consistancy) set aside

  4. slice garlic, onion and mushrooms and saute until onion is golden but not burned

  5. add pasta, cheese, broccolli and sauted vegi's to white sauce (if sauce get too thick add a bit of the noodle water to thin),stir, put in oven proof casserole and bake for 1/2 hour or until heated thru and golden on top
