Lovely peanutty spiced coconutty chicken & veggies!

Recipe Ingredients for Penang chicken

12 g red curry paste
600 g chicken breast
400 ml Light coconut milk
10 ml fish sauce
32 g brown sugar
40 g crunchy peanut butter
250 g broccoli
150 g snow peas
1 1/2 cups red capsicum

Recipe Directions for Penang chicken

  1. Fry off curry paste

  2. Coat chicken in paste and add coconut milk

  3. Stir for 2 mins then add fish sauce, sugar and peanut butter

  4. Stir until smooth, cook gently for 5 mins or until chicken cooks through

  5. Tip: don't allow sauce to boil or it may separate

  6. Steam broccoli and snow peas until tender crisp

  7. Divide and serve with rice
