Makes 50 servings



Makes two big loaves, 8 mini loaves, or about 50 muffins. I named this bread after my great grandmother, Mom Peterson - when I was little, I called her "Mom Peep". I loosely based my recipe for this bread on her (delicious!) recipe for banana bread.

Recipe Ingredients for Peep-a-licious Bread (or Muffins)

1 cup vegetable oil
2 cups orange marmalade
1 cup egg beaters
1 cup unsweetened applesauce
2 cups squash, chopped
1/2 cup carrots, chopped
6 large strawberries, pureed
2 large bananas, pureed
4 cups organic flour
2 t baking soda
1 t salt
1 cup organic rolled oats
1 cup pecan meal

Recipe Directions for Peep-a-licious Bread (or Muffins)

  1. Blend vegetable oil and *orange marmalade in the blender. *You can use any whole-fruit jelly you have in the fridge. I used peach orange mango whole fruit jelly the first time I made these.

  2. Add eggs and vanilla and mix thoroughly.

  3. In the food processor, puree applesauce, squash/zucchini, carrots, strawberries, and bananas. Set aside in a bowl.

  4. In another bowl combine and sift flour, soda, and salt. After sifting, add oats and pecan meal. Stir until evenly mixed.

  5. Add fruit/veggie puree to the wet mixture in the mixer, then gradually add the dry mixture until all ingredients are mixed thoroughly.

  6. Feel free to add ANYTHING else at this point: chocolate chips, sunflower seeds, other nuts, raisins, etc. The sky's the limit!

  7. Bake at 350 degrees for 1 hour (large loaves); 40-45 minutes (mini loaves); 20-25 minutes muffins

  8. NOTES: I got my pecan meal from Priesters Pecans in Alabama, but you could easily smash up enough nuts to make a meal; most of the fruits and the squash are on the "Dirty Dozen" list, so try to buy organic, I don't like using this much oil in recipes, so please let me know if you experiment and find an alternative!
