Recipe Ingredients for Pedro Rosales- CUL 115

2 teaspoons sun-dried tomatoes
2 teaspoons black olives
1/2 teaspoon dried basil
2 teaspoons olive oil
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/2 oz. scallops
1/2 oz prosciutto, (1 slice)

Recipe Directions for Pedro Rosales- CUL 115

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Place the tomatoes, olives, basil, olive oil, salt and pepper into the bowl of a food processor and pulse until all of the ingredients are well blended and the consistency is almost smooth. Scrape the tomato and olive marinade into a small bowl; toss the scallop in the mixture until well coated.

  3. Cut prosciutto into one slice and wrap around the scallop. Arrange wrapped scallop on a baking sheet and bake in preheated oven for twenty minutes.
