Mini versions of pecan pies with a graham cracker hybrid crust.

Recipe Ingredients for Pecan Pie Tarts

62 two full sheets graham crackers
1/2 cup Promise light spread
1/2 cup white whole wheat flour
1/4 tsp salt
2 tbsp powdered sugar
1 tsp cinnamon, divided
1/2 tsp ground ginger, divided
1 egg
1/4 cup brown sugar
1/4 cup white sugar
2 tbsp light corn syrup
1/2 tsp vanilla extract
1/4 tsp orange extract
1 1/2 oz pecan halves (30 halves)

Recipe Directions for Pecan Pie Tarts

  1. Crush the graham crackers.

  2. Combine graham crackers, Promise, flour, powdered sugar, salt, and 1/2 the seasonings. Cut the Promise into the dry ingredients using two butterknives.

  3. Roll the dough into a ball and place in the refrigerator.

  4. To make the filling, first beat the eggs.

  5. Combine sugars, eggs, extracts, corn syrup, and remaining spices with an electric mixer. Beat until eggs are fluffy and sugars are dissolved.

  6. Roll out dough and divide into 6 circles.

  7. Lay each circle in a cupcake cup.

  8. Ladle sugar mixture into crusts.

  9. Drop 5 pecan halves into each crust.

  10. Bake at 350 degrees F for 20 minutes.

  11. Cool for 5 minutes and serve.
