Modified from the Hellmann's Paremesean Crusted Chicken recipe to eliminate the bread crumbs to fit in the South Beach and Best Life diet plans.

Recipe Ingredients for Pecan & Parmesean Crusted Chicken

1/2 lb Chicken, Breast, Boneless, skinless
1/4 cup light mayonnaise
1/4 cup parmesean, grated cheese
1/8 cup pecans, finely chopped
2 t. flax seed meal

Recipe Directions for Pecan & Parmesean Crusted Chicken

  1. Combine mayo and parmesean. Spread on chicken. Sprinkle with pecans and flax seeds.

  2. Bake at 425° for 20 minutes or until thoroughly cooked.
