Recipe Ingredients for Pecan nut loaf

1/2 cup pecans
1 T olive oil
1 onion
1 clove garlic
1 large carrot
1/4 c chopped dried mushrooms
2 cups cooked lentils
1 cup cooked millet
1/2 cup vegetable broth, as needed
3 T brown rice flour
1/4 t thyme
1/2 t sage
1/4 t oregano
1 tsp. salt

Recipe Directions for Pecan nut loaf

  1. Grind pecans

  2. Grate carrot, chop onion, soak and chop mushrooms

  3. Saute veggies in oil until soft

  4. Combine all ingredients in a big bowl

  5. Mix until damp -- broth may or may not be needed

  6. Pour into a greased loaf pan

  7. Back @350 for 45 - 55 minutes

  8. Allow to cool for 5 minutes
