Baked pecan encrusted catfish with asparagus.

Recipe Ingredients for Pecan Encrusted Honey Catfish

1 cup Panko
1/4 cup chopped pecans
3 tsp thyme
1 tbs extra virgin olive oil
1 pepper
1 tsp salt
1 1/4 lb asparagus
2 tbs honey
20 oz catfish

Recipe Directions for Pecan Encrusted Honey Catfish

  1. Preheat oven to 425 F.

  2. Mix together Panko, pecans, 2 tsp thyme, oil, pepper, salt, and 2 tbsp water.

  3. Spread asparagus on baking sheet, coat with cooking spray. Sprinkle with pepper, salt to taste, remaining 1 tsp thyme, and honey.

  4. Toss 1/4 of the Panko mix on the asparagus.

  5. Arrange catfish fillets on asparagus, cover with remaining breadcrumb mix and press.

  6. Bake for 15 minutes.
