Recipe Ingredients for Pecan-Crusted Cod

16 oz. Cod Fillets
1/4 cup pecans, chopped
1/4 cup bread crumbs
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/3 cup multipurpose flour
1/4 cup low-fat buttermilk

Recipe Directions for Pecan-Crusted Cod

  1. Mix all the dry ingredients together minus the flour.

  2. Drudge fillets in flour, then buttermilk, and finally in breadcrumb/pecan mixture.

  3. Grill on medium heat ( I used burner setting 4 )with extra virgin olive oil. Cook each side 3 minutes or until fish flakes.
