Delicious bran muffins packed with fiber and some protein on the side.

Recipe Ingredients for Pecan Bran Muffins

1 1/2 cup boiling water
1 1/2 cup All Bran
1 cup vegetable oil
3 large egg
3 3/4 cups Flour
1 1/2 cup granulated sugar
3 teaspoon baking soda
3 teaspoon baking powder
3 3/4 cups buttermilk
3/4 cup brown sugar
4 1/2 cups All Bran
1 1/2 cups pecans

Recipe Directions for Pecan Bran Muffins

  1. 1) Preheat oven to 350 degrees

  2. 2) Combine hot water and 1 1/2c All Bran, Vegetable Oil, and Egg in a cup and set aside.

  3. 3)Combine dry ingredients. Set Aside.

  4. 4) Combine Buttermilk and brown sugar.

  5. 4)Stir bran mixture in to the dry ingredients. Add the buttmilk mixture.

  6. 5) Gently fold in remaining All Bran and Pecans.

  7. Bake for 20-25minutes in preheated oven.

  8. NOTE: I like to add cinnamon, cloves, and nutmeg for flavor, but not required.
