Comforting Vegetable Stew with Lentil Protein!

Recipe Ingredients for Peasant Style Lentil and Vegetable Soup

3 cup chopped raw Yukon Gold Potatoes
20 medium Carrots, Baby
1 large Onions
4 clove Garlic
2 tbsp Extra Virgin Olive Oil
1 cup Lentils, Mature Seeds
3 tsp Vegetable Base

Recipe Directions for Peasant Style Lentil and Vegetable Soup

  1. Chop everything

  2. Saute onions, celery still softish

  3. Add carrots and potatoes

  4. After a few minutes add 3 cups water and 3 tsp veggie base

  5. Add lentils

  6. And a few canned tomatoes.

  7. Add more water if needed to cover everything

  8. Cook until everything is soft, at least 30 minutes.

  9. Add spices like onion/garlic powder, salt and pepper etc to taste.
