Recipe Ingredients for Peasant Soup (Rachael Ray)

2 tablespoons extra virgin olive oil
6 ounces ham
1 cup carrots
1 cup onion
3 cups leeks
1/2 cup celery
4 cups cabbage
1 teaspoon sugar
4 cups chicken stock
15 ounces cannellini beans, canned
1/4 teaspoon black pepper

Recipe Directions for Peasant Soup (Rachael Ray)

Heat olive oil in soup pot. Add chopped ham, carrots, onion, leeks, celery. Add cabbage (chopped) to pot and cover with 2 cups of water and sugar. Steam the cabbage for 15 minutes. Uncover pot and add stock and beans. Bring to a boil. Reduce to a simmer. Serve.
