Makes 40 servings



Peasant bread recipe using 6 grain flour. I guessed at 4 loaves, 10 slices per loaf giving 40 servings. That seems conservative - probably more than 40, maybe even twice when we slice it thin.

Recipe Ingredients for peasant bread

4 1/2 cups white flour
1 cup whole wheat flour
1 cup rye flour
1 1/2 tablespoons salt
1 1/2 tablespoons yeast
3 cups water

Recipe Directions for peasant bread

  1. combine

  2. let rise 2 hours

  3. stick in fridge

  4. when ready to bake a loaf, grab a grapefruit-sized handful. Form and let rise for 30 minutes. Preheat oven to 450. Bake on stone with 1 cup water in separate pan for ~30 minutes.
