Recipe Ingredients for Peasant Bread from Olga's Healthy Choice

1 1/2 cup water
1 tbsp instant yeast
1/2 tbsp sea salt
1 cup whole wheat flour
1 cup spelt
1 cup bran

Recipe Directions for Peasant Bread from Olga's Healthy Choice

  1. Pure yeast in luke warm water and kept about 10 minutes.

  2. Then add other ingredients and make a nice doug. (Please add some more water if necessary to make a doug in the softness of your earlobe.)

  3. Then put your doug aside covering with a cloth or plastic bag and let it rest for about 2-3 Hrs. Then refrigerate all night.

  4. In the morning, put in two pieces and prepare two loaves of bread. Make some nice cuts with a big knife over the loaves and spread some flour.

  5. Prepare your electrical oven at 125oC in advance. On the lower level baking tray pure 400 ml water. Then place your loaves on another baking tray using baking paper. And place the tray just over the previous tray.

  6. Bake for about an hour or so.

  7. Then, remove excess flour on the loaves. When it cooled, slice them.

  8. In a preserving bag, your bread can safely stay in lower shelf of your refrigerator for about two weeks.
