Green peas, tahini, yogurt deliciousness!

Recipe Ingredients for Peas and Tahini Spread

1 lb frozen peas
2 scallions
1/2 cup low-fat plain yogurt
4 tbsp tahini
2 tbsp lemon juice
4 tbsp water
1/2 tsp cumin
1/2 tsp smoked paprika
1 tsp salt

Recipe Directions for Peas and Tahini Spread

  1. Blanche peas and then shock and dry.

  2. Mix dressing ingredients together in a bowl.

  3. In food processor mix together peas, scallions, and dressing until mostly smooth but with a few chunks left.

  4. Serve on pita, toast, or crackers.
