Similar to macaroni & cheese, but with added vegetables.

Recipe Ingredients for Peas/Corn Pasta Bake

13 1/2 oz whole wheat rotini
1 c skim milk
2 tbsp corn starch
1/4 c water
1 1/2 c sharp cheddar cheese (shredded)
1 1/2 c frozen corn
1 1/2 c frozen peas
1/4 c bread crumbs

Recipe Directions for Peas/Corn Pasta Bake

  1. cook the pasta as directed

  2. in a large saucepan, bring milk to a simmer.

  3. add cornstarch to water, stir until dissolved and add to milk. bring to a quick boil, then lower heat to a simmer.

  4. add cheese to the thickened milk & stir with a wisk or fork until melted. add frozen vegetables.

  5. drain the pasta & mix with the cheesy vegetable mixture. pour in a casarole dish, top with bread crumbs and bake at 350 for 30-45 minutes.
