Peas and Carrot stew over vermicelli rice

Recipe Ingredients for Peas and Carrot Stew

32 ounces frozen peas and carrots
10 ounces diced tomatoes
1 medium onion
7 cloves garlic
2 tbsp salt
2 tbsp pepper
10 ounces tomato sauce
2 tbsp light margarine
2 tbsp olive oil
1 lb ground turkey breast
1 lb sliced mushrooms

Recipe Directions for Peas and Carrot Stew

  1. brown the onions and garlic in butter and oil.

  2. add mushrooms and brown for 5 more minutes

  3. add turkey breast and cook until done

  4. add tomatoes and tomato sauce

  5. cook for 30 minutes

  6. add peas and carrots and cook for another 10 minutes
