Gingered cooked cooked carrots, dried mint, and dried lemon peel add a small amount of zest to a simple (bland) barley-split pea soup. (You'll probably want more or different spices!)

Recipe Ingredients for Pearled Barly Split Pea Soup (no salt)

1/2 cup (66 grams) pearled barley
1/2 cup (90 grams) green split peas
1 tbs red wine vinegar
1 cup carrots, sliced
1/2 tbs brown sugar
1/2 tsp ginger
1/4 tsp dried mint leaves
1/4 tsp dried lemon peel

Recipe Directions for Pearled Barly Split Pea Soup (no salt)

  1. Rinse and soak barley and split peas (soaking can be omitted, if desired) for 1 - 3 hours.

  2. Cover with 1 to 1-1/2 inch water.

  3. Bring to boil, skim off any foam that forms.

  4. Reduce to med-low and cook for 45 minutes.

  5. Add 1 TBS red-wine vinegar, cook 15 minutes more while preparing carrots...

  6. Cook carrots, covered, in microwave with a little water until tender.

  7. Add brown sugar and ginger to carrots.

  8. Add to barley and split peas.

  9. Add spices.

  10. Serve with flatbread, crackers or rolls.
