Pearled barley salad with grape tomatoes, olives & shrimp

Recipe Ingredients for Pearled barley & shrimp Mediterranean salad

2 cup Pearled Barley
1 oz Feta Cheese
2 oz Greek Kalamata Olive Bar
15 ea. Raw Tomato Cherry
4 Teaspoon Juice
0.25 cup Olive Oil
0.5 cup Parsley
0.25 cup, chopped Onions, Spring Or Scallions
8 oz Shrimp, Mixed Species

Recipe Directions for Pearled barley & shrimp Mediterranean salad

Cook barley. Combine cooked shrimp, chopped scallions, parsley, olives whole grape tomatoes and feta. Mix in 1/4 cup EVOO and juice of one lemon. Season with salt and fresh ground pepper.
