Recipe Ingredients for Pearl barley with Spinach and pork Mince

3 tbsp extra virgin olive oil
1 small onion
150 g pork mince
200 g pearl barley
120 g spinach
1/2 Wine - White - Glass
1000 g vegetable stock
2 tbsp Italian Parsley
4 salt and pepper

Recipe Directions for Pearl barley with Spinach and pork Mince

  1. cook finely chopped onion and pork in tbsp of the oil until pork is lightly browned

  2. stir in pearl barley and spinach, cook for a couple of min

  3. add wine and allow to evaporate

  4. Gradually add stock, waiting for each ladle to be absorbed. Continue until barley is cooked, about 30-40min

  5. remove from heat, stir in remaining oil and finely chopped parsley season with salt and pepper. serve immediately
