Use Brown Cow Non-Fat Vanilla Yogurt From Cooking Light

Recipe Ingredients for Pear and Walnut Muffins

1/2 c walnuts, chopped
1 c flour
1/3 c flour, whole wheat
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 c brown sugar, packed
2 T canola oil
1 tsp vanilla extract
8 oz yogurt
1 egg, large
1 1/2 c pear, peeled, finely diced
1 tsp sugar

Recipe Directions for Pear and Walnut Muffins

  1. Preheat oven to 400. Coat two 12-cup mini-muffin tins with spray.

  2. Grind walnuts in a food processor til fine.

  3. Lightly spoon flours into dry measuring cups, level with knife. Combine flours, baking powder, baking soda and salt in a medium bowl; stir well with a whisk. Stir in ground walnus. Make a well in center of mix.

  4. Combine brown sugar, oil, vanilla, yogurt and egg in a small bowl. Add to flour mix, stir just til moist. Fold in diced pear.

  5. Spoon into muffin tins; sprinkle with 1 tsp sugar. Bake at 400 for 15 minutes or til muffins spring back when touched lightly in center. Remove from pans immediately. Place on wire rack. Serve either warm or at room temp.
